“Magnate” concentrate is used for production of attractively-tasting mixed-type bread containing apple fibre and various types of grains. Natural, dried leaven made from wholemeal rye flour and wholemeal wheat flour with addition of lemon and lime juice mixed with delicately acidic apple fibre gives both an original taste and an attractive dark crumb with increased moisture. The taste and look of bread is even more attractive thanks to admixture of corn grits, coarsely ground soybeans, sunflower seeds and cornflakes. It is recommended to use 40% of the concentrate in relation to the total amount of flour.
