The “Rye-Apple Bread” concentrate is used for production with the one-phase method of attractively-tasting 100%-rye bread with admixture of apple fibre, without the need to apply leaven. Simplicity of making, increased bread yield – thanks to fibre which absorbs a few times more water than it weighs – moist crumb, original taste and attractively dark crumb as well as high fibre content – these undoubtedly are the advantages of bread products made from “Rye-Apple Bread” concentrate. It is recommended to use 20% of the concentrate in relation to the total amount of flour.
